After your holiday meals, you’re bound to have leftovers since it’s better to err on the side of making too much food instead of too little. Many people hate the idea of having leftovers as they dread eating the same thing for days at a time. In this week’s Cypress River Blog, we’re going to share with you some recipes that you can try to make use of those leftovers to make something that isn’t a holiday dinner.

 

Shepherd’s Pie

Potatoes:

  • 1 1/2 pounds russet potatoes

  • 1/4 cup half-and-half

  • 2 ounces unsalted butter

  • 3/4 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper

  • 1 egg yolk

 

Meat:

  • 2 tablespoons canola oil

  • 1 cup chopped onion

  • 2 carrots, peeled and diced small

  • 2 cloves garlic, minced

  • 1 1/2 pounds ground lamb

  • 1 teaspoon kosher salt

  • 1/2 teaspoon freshly ground black pepper

  • 2 tablespoons all-purpose flour

  • 2 teaspoons tomato paste

  • 1 cup chicken broth

  • 1 teaspoon Worcestershire sauce

  • 2 teaspoons freshly chopped rosemary leaves

  • 1 teaspoon freshly chopped thyme leaves

  • 1/2 cup fresh or frozen corn kernels

  • 1/2 cup fresh or frozen English peas

 

If you’ve got a large amount of extra mashed potatoes, we suggest using it for some shepherd’s pie! Using this recipe, you can make a delicious dinner utilizing the extra potatoes from your holiday meal and you’d enjoy the diversity!

Dad’s Leftover Turkey Pot Pie

Ingredients:

  • 2 cups frozen peas and carrots

  • 2 cups frozen green beans

  • 1 cup sliced celery

  • 2/3 cup butter

  • 2/3 cup chopped onion

  • 2/3 cup all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 1/2 teaspoon celery seed

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon Italian seasoning

  • 1 3/4 cups chicken broth

  • 1 1/3 cups milk

  • 4 cups cubed cooked turkey meat - light and dark meat mixed
